How to make aloo paratha

with step-by-step pics.

How to make paratha dough

  1. Firstly, take 1 cup whole wheat flour. Add 1/2 tsp salt and 1 tsp oil to it. If you want, you can take 1/2 cup wheat flour and 1/2 cup refined flour also. I recommend using wheat flour only for health benefits.

2. Knead it into a dough with water as required. I have used 1/2 cup water to turn the flour into dough. Rest the dough for at least 10 minutes and then grease with 1 tsp oil and make it smooth by kneading again for a minute.

3. Divide the paratha dough into four equal balls.

How to make stuffing for aloo paratha

4. Further, take 1 big boiled potato or 2 small boiled potatoes. Usually, I boil many potatoes whenever I plan to make aalu ka paratha and keep the extra potato (alu) in freeze to be used for making other aloo delicacies for lunch or dinner.

5. Peel the aloo(potato) and add 1.5 tbsp fresh and chopped coriander leaves, 1/2 tsp cumin powder, 1/4 tsp garam masala powder, 1/2 tsp salt, 1/4 tsp chaat masala, 1/2 tsp kashmiri red chili powder, 1/4 tsp dry mango powder (amchur powder) to it.

6. Mix well and it will turn into a potato stuffing shaped in a dough.

7. Similarly, divide the aloo stuffing into 4 balls as we will be making four parathas out of the dough.

How to prepare aloo paratha

8. Take one ball of dough and roll it into a 4-5 inch diameter roti by dusting some flour.

9. Further, put one aloo stuffing ball on it.

10. Bring the edges towards the center to close the stuffing inside the rolled roti for making the potato stuffed paratha. Flatten the stuffed ball gently between your palms.

11. Roll out the stuffed ball into an 8-9 inches diameter roti by rolling gently with the rolling pin and dusting with some wheat flour.

12. Heat a non-stick tawa and drizzle a few drops of oil on it for greasing just to make sure that the paratha does not stick.

13. Transfer the rolled-out stuffed roti on the tawa and continue cooking on medium-high flame till the bubbles appear on it.

14. After a minute, flip the paratha and cook the other side of the paratha.

15. Flip the side again and now spread 1/2 tsp oil or ghee on the paratha and flip again.

16.  Apply the ghee or oil on the other side also and flip and cook by pressing with a spatula.

Serve easy to make irresistible aloo paratha (aalu ka paratha or potato paratha) with butter, curd, or pickle.

Expert tips for aalu ka paratha

  • Do not skip adding fresh coriander leaves and the mentioned spices in the aloo stuffing as they give a very good taste to the aalu ka paratha.
  • Apply the ghee or ghee to the paratha only when paratha is partially roasted.
  • If guests are coming over, you can prepare half-done parathas in advance, like roast them partially and store them. While serving, again cook them on tawa after applying ghee or oil. I will help you to serve hot parathas in bulk in a hassle-free manner.
  • Finely chopped onions and green chilies can be added to the aloo stuffing if you like them.
  • You can increase or decrease the thickness and size of the paratha as per your liking. Kids like mini paratha so consider serving them mini paratha garnished with some ketchup.
