Arbi Fry Recipe | Dry Arbi Recipe | Sukhi Arbi Recipe –Arbi fry (Colocasia Fry) is a simple yet tasty dish. It is one of those delicacies which do not require much preparation or ingredients. Pair it with Indian bread like roti or paratha and any dal (lentils) or kadhi and enjoy your delicious full meal.
Arbi has other names too, like colocasia roots or taro roots. Sindhis call it kachalu. It is one of their regular dishes.
Arbi Fry is known with other names also like, arbi masala dry, arbi masala fry, sukhi arbi, colocasia fry, dry arbi.

- While pressure cooking arbi, make sure that you parboil the arbi upto one whistle only because if you fully cook the arbi then it may disintegrate in oil while shallow frying and you will not get the crispy texture.
- While adding spices to the fried arbi, you need to keep the flame low else the spices will burn.
- Stirring the fried arbi to coat them with spices should be done carefully because the cooked arbi tend to break.
- Use a non-stick pan for shallow frying arbi because arbi is starchy and it can stick at the bottom.
How to make sukhi arbi recipe
- Firstly, take 400gm arbi. wash well and pressure cook up to one whistle. Once the pressure releases, take out the arbi or kachalu from the water. We will partially cook the arbi upto 70-80% by pressure cooking. The rest of the cooking will take place during shallow frying them.
2. Peel the outer layer of parboiled arbi.
3. Cut each arbi, length wise into 2 pieces.
4. Further, heat oil in a non-stick pan for shallow frying, Once oil is hot, add arbi to it.
5. Once fried from one side, turn and continue to fry on another side.
6. When both sides of arbi are crispy, switch off the flame and transfer fried arbi on a plate. Take out the remaining oil from the pan into a big bowl. you can use it for cooking other dishes.
7. Place the fried arbi or colocasia in the same pan and turn on the heat. Put the flame on low. Additionally, add 1 tsp kashmiri red chili powder, 1/4 tsp turmeric powder. 1 tsp garam masala powder, 1/2 tsp cumin powder, 3/4 tsp salt, 1/2 tsp dry mango powder (amchoor), 1/2 tsp asafoetida(hing).
8. Add 1 tsp oil to the fried arbi. Spices will coat well with the addition of the oil. Stir lightly so that the arbi does not break. make sure that you do this on low flame to avoid burning the spices.
9. After stirring, continue to cook arbi for a minute on low flame and switch off the gas. Garnish with chopped coriander leaves.
Your simple and tasty arbi fry or sukhi arbi is ready to be served.
