Sindhi Besan Tikki ki Sabji Recipe–Sindhi Besan Tikki ki Sabji is a popular dish from Sindhi cuisine. It is a traditional and simple recipe. Gram flour is the main ingredient of the recipe to make tikkis or patties. Those flavored patties/Tikkis are cooked in onion-tomato gravy.
It is a simple yet delicious preparation with a requirement of limited pantry items. Do not worry if your fridge does not have veggies as we can make this Besan Tikki curry with a few basic ingredients also. Onions are a must for this Besan Tikki curry as they give a distinct flavor to the Tikki as well as to the gravy.
This Besan Tikki ki Sabzi ((Gram flour patties in flavored gravy) is deliciously prepared by my mother. My Grandmother used to love this. Whenever I make this Besan Tikki gravy, it always reminds me of my grandmother’s love for this sabzi. There are some variations in making this recipe in Sindhi households.
Variations of Besan Tikki ki Sabzi:
1. Besan tikkis can be either directly cooked in Onion-Tomato gravy or they can be fried first and then can be simmered in gravy later. I directly cook the tikkis in gravy as my family finds it a tastier and healthier option compared to frying the tikkis first.
2. Use of dried pomegranate seeds in Tikki dough is optional. I do not use it in Besan tikkis.

How to Make Besan Tikki ki Sabji

Ingredients:
For Besan tikki–
- 2 cups Gram Flour (Besan)
- 3 onions finely chopped
- Some coriander leaves finely chopped
- 2 tbsp oil
- 1 tsp salt
- 1 tsp Kashmiri red chili powder
- 1/2 tsp Turmeric powder
- 1tsp garam masala
- 1/2 tsp cumin powder
- 2 pinch baking soda
- 1 tbsp water
For Besan Tikki ki Sabji gravy
- 5 cloves garlic
- 1-inch ginger
- 3 onions finely chopped
- 3 tomatoes
- 1 tsp salt
- 1 tsp red chili powder
- 1/4 tsp turmeric powder
- 1 tsp garam masala
- 1/2 tsp cumin powder
- 1 tsp coriander powder
- Some coriander leaves for garnishing
Method–
For Besan Tikki
- Take gram flour in a bowl, add finely chopped onions, finely chopped coriander, red chili powder, garam masala, turmeric powder, and salt.
2. Next, goes 2 tbsp oil to it. Mix it well.
Onions have some water content to it, so some binding will come to the flour once you mix all the ingredients together
3. Further, add 2 pinches of baking soda. Now use the water to knead the dough. The dough has to be firm so add little water at a time.
I have used 1 tbsp water to knead the stiff dough.
4.Let it rest for 5 minutes. in the meanwhile do the preparation for the gravy.
once the dough has rested for a while, grease your palm with a little oil, take some dough in hand, make a ball out of it and then flatten it to make a Tikki. Tikki size can vary as per your choice but do not make it thick otherwise it may not be cooked properly from inside.
For Besan Tikki Ki Sabji Gravy:
5.Heat 4 tbsp oil in a cooker.
Additionally, add finely chopped ginger-garlic to it.
6.Saute for 30-40second then goes finely chopped onions to it.
7.Cook until it gets browned.
8. Further, add crushed tomatoes to it, alternatively, you can use tomato puree or finely chopped tomatoes as well. I have crushed the tomatoes in a chopper.
9. Add all the spices to it and cook until oil is separated from the gravy.
10. Add 2 cups of water to it, and bring it to a boil.
11. It is time to add Tikkis to it, add Tikki one by one. After adding all the Tikkis, just stir once lightly with a small spoon. Be careful otherwise, tikkis might break.
12. Cover the lid of the pressure cooker and cook for approximately 8 minutes on medium to high flame up to few whistles, then for 2 minutes on low flame.
Its aroma will tell you once done. Once the pressure releases naturally, open the lid and garnish with finely chopped coriander.
13.Your toothsome Sindhi Besan Tikki ki sabzi is ready.
