Dahi Bhindi Recipe | Okra Curry | How to make Dahi Bhindi recipe with step by step instructions , pics and recipe card.

Dahi Bhindi is okra preparation in curd-based curry, dahi means curd and bhindi is a Hindi word for okra. Sauteed okra, mixed with Indian spices and cooked in curd-based gravy gives a delicious okra curry. It goes well with any Indian bread like roti, chapati, or naan.

Okra (Bhindi) is a common and very much liked vegetable in India, it can be prepared in a variety of ways. Even kids also like this vegetable a lot. Indian homes have okra in their menu list for sure and the ease of making okra along with great taste make it a preferred choice for lunch or dinner menu.

Curd is extensively used in Indian gravies to make curry. Dahi bhindi curry also has a curd base and the dish has semi-gravy consistency so that you can relish it with roti or rice without missing any dal in the menu.

In this Okra Curry recipe

  • Make sure to wipe washed bhindi or okra well to dry them else it will release more slime and the final dish will not taste that good.
  • Phutane (roasted chana dal) added to curd (dahi) gives a good binding to the gravy and prevents the curd from curdling.
  • While sauteeing bhindi, do not cover the pan else the steam will make the bhindi soggy.
  • I have used mustard oil in this dahi bhindi curry recipe. However, you can use any other oil also.
