dal pakwan, this name is enough to make your mouth watery if you are a Sindhi or if you have tasted this recipe before. This is a popular traditional sindhi beakfast recipe, a combo of dal that is lentil and Pakwan which is a crispy deep-fried flatbread.
pakwan is made from all-purpose flour. However, you can mix whole wheat flour with refined flour to make it healthier. In the dal pakwan recipe, either chana dal(Bengal gram or split chickpea) or Moong dal( yellow moong lentil) is used. Chana dal is widely used but many people are not aware that Moong dal is also used in many Sindhi households to prepare this delicacy. I use Moong dal because my family prefers Moond dal over chana dal and it is easy on the stomach as well.
I prefer making this sindhi breakfast for Sunday brunch as it is very filling. Although making dal pakwan is a bit lengthy process, the end product is a visual as well as taste delight. Whenever I prepare this sindhi breakfast recipe, I make a few Pakwans extra and put them in an airtight container. Next day I make chaat out of it, the same way we make Papdi chaat, Instead of Papdi, we need to put Pakwan broken in uneven pieces. It is really yummy. Try that out.

how to make dal pakwan recipe with step by step photos
Step by step process with pics:

- Take 1 cup maida(All purpose flour), 3/4 tbsp rice flor,3/4 tsp cumin seeds 1tbsp oil, a pinch of red chilli powder, 1/2 tsp salt and mix well.
2. Knead into a dough, I have used 1/4 cup water to knead the dough. Let it rest for 5-10 minutes, Finish it with 1/4 tsp oil to make it smooth.
3. Make equal size balls out of it.
4. Take one ball, dust it with little flour, and roll into a thin circle of 6-7 inches. Prick it with a fork so that it does not puff while frying.
5. Heat oil in a Kadai. Slide the Pakwan carefully into the oil and deep fry on medium flame.
6. When it takes a light golden colour, put the flame to low and continue frying till it gets dark golden colour on both sides.
7. Take out the fried Pakwan on a plate and the same way deep fry all the Pakwans.
8. Your crunchy and delicious Pakwans are ready.
sindhi style moong dal recipe
9. Take 1/2 cup Moong dal.
10. Rinse it well and add it to pressure cooker with 3.5 cups of water. Further add 1/2 salt, 1/2 tsp turmeric powder, 1 chopped tomato and 1 deseeded and chopped green chilli to it
11. Pressure cook for 7-8 minutes on medium flame till completely cooked. Let the pressure release naturally. Open the Lid of the cooker. mash well with the back of the big spoon,
12. Heat 2 tbsp oil in a pan, crackle 1 tsp cumin seeds in it
13. Add 1 chopped tomato and add 3/4 tsp salt, 1/2 tsp Kashmiri red chilli powder, and 1/2 tsp garam masala to it.
14. When oil starts separating from it, add it to the dal. Additionally, add 1 tbsp lemon juice to it
15. Mix well and garnish with finely chopped corriander leaves.
16. Your flavourful dal is ready.

Equipment
- Pressure cooker
- Pan or Indian Wok (Kadai) for frying
Ingredients
Pakwan
- 1 Cup Maida(All purpose flour)
- 3/4 tbsp Rice flour
- 1 tbsp Oil
- 3/4 tsp Cumin Seeds
- 1 pinch Kashmiri red chilli powder
- 1/2 tsp Salt
- 1/4 tsp oil to finish the dough
- 1/4 cup Water
- Oil for Frying Pakwan
Dal
- 1/2 Cup Yellow Moong Lentil(dal)
- 3.5 Cup Water
- 2 Tomato chopped
- 1 green chilli -deseeded and chopped
- 1.25 tsp salt
- 1/2 tsp kashmiri red chilli powder
- 1/2 tsp Turmeric powder
- 1/2 tsp Garam Masala powder( I have taken Mild Garam masala, you can adjust the quantity as per your wish)
- 1 tbsp Lemon Juice
- 1 Handful Corriander leaves
Instructions

Serving Suggestions and Notes for sindhi dal pakwan recipe
When it comes to serving this scrumptious Sindhi breakfast item, there are variations of serving.
1. We keep the serving minimal with only chopped onions and tomatoes which dominate the garnishing and enhances the look of the dish as well as the taste.
2. It is served with green chutney and sweet chutney which is poured over dal. you can either make it at home or you can use store-bought chutneys
3. You can place one Pakwan on a plate, Pour dal over it and place chopped onions and chutneys over it, and serve as a pizza. Alternatively, serve it separately with Dal in a bowl with the topping and Pakwan on a plate.
In this dal pakwan recipe
1. I have topped the dal with chopped onion, tomatoes, and Coriander leaves which I generally do when I serve at home. If you want you can pour store-bought chutneys over this onion-tomato garnish.
2. I have used Moong dal which takes lesser time to cook and can be served with roti or naan also if someone does not like to have deep-fried Pakwan. My grandmother liked to have simple food so whenever we were making Dal Pakwan, she used to eat Dal with Chapati and used to love it.
3. The consistency of the dal is thick as we serve thick dal with Pakwan.

1. You can increase or decrease the spice level as per your choice.
2. Pakwan size can also be smaller or bigger as per your preference.
3. Make this recipe when you have plenty of time in hand.
4. You can use sweet and green chutney if you have it.
