Gajar Ka Halwa Recipe–Gajar ka halwa is a popular Indian sweet made with red juicy carrots cooked in milk, combined with sugar, and roasted in ghee along with nuts. Gajar Ka Halwa has other names as well like carrot halwa, gajrela, gajar halwa.
Carrot Halwa is a winter special Indian dessert as red carrots are mainly available in the cold season. Aromatic and heavenly carrot halwa or gajar ka halwa is a true delight to the senses.

Tips for Carrot Halwa | Gajar Halwa with Khoya
- It is recommended to add unsweetened khoya to the carrot halwa as it takes the divine taste of the halwa to one level up.
- Sugar quantity can be adjusted as per your sweetness preferences.
- You have to keep stirring the halwa in between in order to avoid burning the halwa.
- Saffron addition to the gajar ka halwa is optional.
- Traditionally, we make carrot halwa with red carrots as they give good taste and color to the dish. However, you can use orange carrots as well if you do not get the red carrots.
How to make Gajar Ka Halwa
Making Gajar Ka Halwa
- To begin with, wash 500gms of carrots and peel them. Grate them with a big hole handheld grater for the better texture of halwa.
2. Secondly, cook grated carrots in a non-tick pan with 2 cups of full-fat milk.
3. In addition, keep stirring the carrots in between to avoid sticking the mixture at the bottom and sides.
After 12-15 minutes, milk is almost evaporated,
4. Now add 6 tbsp sugar and mix.
5. Sugar will leave the water. Reduce the mixture by cooking and stirring.
6. Next, add 3 tbsp ghee. Cook the mixture in ghee (clarified butter).
7. Additionally, take 14 golden raisins, 14 cashews, 14 pistachios. Cut cashews and pistachios lengthwise. Keep 9-10 nuts aside for garnishing at the final stage.
8. Next, add the remaining nuts to the carrots mixture. Nuts will be roasted in the ghee along with the carrots.
9. Additionally, add 1 tsp cardamom powder and mix well.
10. Further, crumble 100 gm of khoya(unsweetened) and cook it with the carrots, put the flame on low while adding and mixing khoya.
11. You will see the khoya melting and combining with the carrots. Next add, few strands of saffron.
12. Switch of the gas as delicious gajar ka halwa is ready.
13, You can enjoy the gajar halwa warm or chilled as per your preference. Garnish with more nuts to make it look more tempting.
Serving Suggestions for Gajar Halwa
- You can serve carrot halwa in small dessert bowls, warm or cold as per your choice.
- My way of serving-You can transfer warm halwa in small rectangle dishes, press it with a spoon, and keep the dishes upside down on a serving tray. Remove the dishes from the tray and do the nuts garnishing on gajar halwa. I have done it the same way as you can see in the pic.
- If you are serving carrot halwa cold then either pair it with ice cream or serve it as it is.
