Gatte Ki Sabji recipe | Gatte Ki Sabji | Gatte Ki sabzi with step-by-step process and pics -Gatte ki sabji is a Mouth-watering delicacy from Rajasthani Cuisine which has Gram flour (Besan) dumplings as the main ingredient. In this Gatte Ki Sabji recipe, Curd can be completely omitted by increasing the tomato puree quantity as I have used the base of onion-tomato along with some curd for gravy. Gatte Ki Sabji is also called Gatta curry or Besan gatte ki sabji.
When you do not have any veggies at home or when it is time to call a guest at home or when you feel like eating something traditional then this is the dish to bank on.
It tastes good with Bajra roti, Jowar Roti, Missi Roti, or even chapati or Rice.
Gatte is sabji has many variations as some people make it with curd, some go with onion-tomato gravy. We can choose the gravy we like but the trick is to reserve the water that you get from boiling the gatte and add it to the gravy as it will make the gravy tasty and give it the required texture.
Use of curd while kneading the dough for Besan gatte is another secret of good gatta curry as it will make the gatte soft which is a prerequisite for a delectable besan gatte ki sabji.

Besan Gatte Ki Sabji | Gatte Ki Sabzi
Ingredients:
For Gatte
- 1.5 cup Gram flour (Besan)
- 1.5 Tbsp Ghee
- 2 Pinch asafoetida
- ¾ tsp Kashmiri Red chili powder
- 1/4 Tsp Turmeric Powder
- ¾ tsp Garam Masala
- ½ tsp cumin powder
- ¾ tsp Salt
- 3 tbsp Curd
- 4 cups water for boiling gatte
- 1tsp oil to make the dough smooth
- ¼ tsp Turmeric Powder to be added to the water.
For Gravy:
- 3 Tbsp Ghee
- 1 tsp Cumin Seeds
- 7 cloves garlic
- 1/2 tsp Kashmiri red chilli powder
- 1.5 inch Ginger
- 1 small onion
- 1/2 tsp Garam masala
- 2 Big tomatoes
- 1 Tsp Kasuri Methi
- 1.5 tsp Salt
- 1 Tsp Corriander powder
- 1/2 Tsp Cumin Powder
- 1/2 Tsp Turmeric Powder
- 4 Tbsp Curd
- Plain Water 1/2 cup
Step by step Instructions with pics
For Besan Gatte
- Take Gram flour in a big bowl. Add all the spices mentioned above for the Gatte. Now add ghee in the center
2. Mix with fingers well. Add curd and mix well. Knead into a dough. I did not use water as curd was enough to bind the dough.
3. Finish the dough with 1 tsp of oil. keep it aside for 5-7 min.let it rest.
4.Now divide the dough into 4 balls. Grease your palms with oil and roll each ball into a cylindrical shape.
5.Boil 4 cups of water in a pan or kadai. Add these cylindrical shapes one by one. The water level should be a few inches above the gatte.
6. Add 1/4 tsp Turmeric Powder to the water. Cook for a few minutes. Usually, it takes 15-16 min. when gatte are cooked they will float on water and bubbles will appear on them.
In the meanwhile prepare gatta gravy.
For the onion-ginger-garlic paste
Grind onion, ginger, garlic to make a paste.
For Tomato puree
Grind the tomatoes in a mixer without adding water. The Puree is ready.
For Gatte Gravy
- Heat ghee in a non-stick Kadai. Add cumin seeds to it.
2. After that goes onion-ginger-garlic paste to it, saute for few minutes till the raw smell goes and it changes the color.
3. Now add the tomato puree to it.
4. Add all the spices to it and cook till oil/ghee separates on sides. In the meanwhile check the gatte. They will float on water and bubbles will appear on them.
5. Take out the gatte from water. Reserve the gatte water for the gravy.
6. Cut the gatte into pieces.
7.Here is the gatte water that we will use in the gravy.
8.. Ghee has separated from the gravy.
9. Next goes the Gatte into it. Mix lightly.
10. Whisk the curd with the spoon.
11. Add this curd to the gravy.
12. Mix lightly.
13. It is time to add gatta water that we got after boiling the gatta. We have used only one medium onion in preparing the curry as the thickness of the gravy will come by this besan gatta water. This water will add flavors to the gravy.
14. Add 1/2 cup plain water to the gravy along with this gatta water else the gravy will be very thick.
Cover the lid of the pan and keep the flame slow to medium and let the gatte Simmer in gravy for 5-7 min.
After a few minutes, the ghee will start separating on the sides. Switch off the gas and serve.
15. Your Delicious Gatte ki sabji is ready. Garnish with finely chopped coriander leaves.

- 1 tsp oil to be used for making the dough smooth
- 4 cup water
- 1/4 tsp turmeric powder to be added to the water.
For Onion ginger garlic paste
- 1 small Onion
- 7 cloves Garlic
- 1.5 inch Ginger piece
For Tomato puree
- 2 big Tomatoes
For Gatte Gravy
