Even today, I like the indulgence of maggi noodles once in a while as it satiates the taste buds in a jiffy. Whenever we go out shopping on weekends and we are back home hungry, the only food item that comes to mind to make and serve hastily is the maggi. Mid-night cravings are often satisfied with these easily available 2-minute maggi noodles. You can have maggi in your breakfast or as your evening snack or as your quick dinner item. Though it is not healthy to have it frequently but enjoying it occasionally is fine with the variations that take the taste to the level up.

How to make maggi
Boiling Maggi noodles
- Firstly, boil 4 cups of water in a pan and 1 tsp salt and 2 packets of Maggi to it.
2. Let it cook for a few minutes until done and switch off the gas.
3. Further, transfer maggi noodles on a colander to get rid of the water in which it was boiled. The starchy water makes the Maggi sticky. drizzle 1 tsp of oil on boiled maggi noodles and mix gently.
Making Maggi Masala
4. Take 1 chopped tomato, 1 tbsp chopped carrot, 1 tbsp chopped french beans, and 1 tbsp green, yellow and red bell pepper chopped into small pieces.
5. Heat 2 tbsp oil in a pan.
6. Add all the chopped vegetables and 1/2 tsp asafoetida powder to the hot oil and saute the veggies for 1 minute.
7. Add all the chopped vegetables and 1/2 tsp asafoetida powder to the hot oil and saute the veggies for 1 minute. additionally, add 1/2 tsp salt, 1/4 tsp garam masala powder, 1/4 tsp turmeric powder, 1/2 tsp cumin powder, and 1/2 tsp kashmiri red chili powder to the vegetables and gently mix it.
8. Once veggies are coated with the spices, add 1 chopped tomato to the vegetables.
9. Open maggi tastemaker that comes with the maggi packet and add to the tomatoes.
10. Stir the mixture and continue cooking for 1-2 minutes until tomatoes get mushy.
11. Further, add boiled maggi noodles to the prepared masala vegetables.
12. Mix maggi noodles gently with masala-coated veggies and cook for 1-2 minutes so that all the flavors are absorbed by maggi.
13. Toss maggi with the vegetables and masala again and switch off the gas. Garnish with chopped coriander leaves.

For this quick vegetable masala maggi noodles recipe
- I like to discard the water in which we boil the maggi as the starchy water makes the noodles stick together, Washing it under running water, then mixing them with the masala makes the noodles taste even better.
- Addition of the vegetables can vary as per your liking of the veggies. Add as many colorful veggies as you want. Onion, spinach, zucchini, can also go well with your quick maggi noodles.
- If you like cheese then grate some cheese over the prepared maggi and serve the cheesy version of your vegetable masala Maggi.
