I make a variety of dals for my lunch or dinner menu. It is sometimes one dal like chana dal, moong dal, arhar dal, masoor dal or it can be a mix dal, the combination of 3 dal, 4 dal, or 5 dal popularly called as panchmel dal

This mixed daal has the goodness of 4 lentils. However, you can use 3,4, or 5 lentils of your choice also. I have taken the equal quantity of the different dals like chana dal (bengal gram split), arhar dal/toor/tuar dal (split pigeon peas), moong dal (split yellow lentil), green moong dal ( split green gram) in this mix daal recipe.
In this mix daal recipe
- It is advisable to soft-cook the dal with some salt in the pressure cooker, If you soak the dal for some time the cooking time will reduce and the dal will be easy to digest.
- I have used onions and ginger with the dal while pressure cooking them, this enhances the flavor of the dal.
- If you do not have lemon juice then you can increase the quantity of the tomatoes to add more sourness. however, the combination of tomatoes and lemon juice gives the best results.
- Pour cumin seeds (jeera) tadka or tempering on prepared mix dal and enjoy it as mix dal tadka.
- This recipe yields the medium consistency dal that can go well with roti and as well rice. However, you can make it more thick or thin by adjusting the water in the recipe.
- Oil or ghee can be used in this mix dal recipe but if you use ghee to prepare this mix dal fry then it will be more flavorful.
How to make mix dal fry
Cooking dal (lentil)
- Firstly, take mix dals that include 2 tbsp chana dal, 2 tbsp green dal, 2 tbsp arhar (toor) dal, 2 tbsp moong dal.
2. Wash mixed dal together with water a few times. After rinsing dal, keep it aside soaked in water.
3. Further, boil 4 cups of water in a pressure cooker without the lid on.
4. Once the water starts boiling, add 1 tsp grated ginger and 1 tsp salt to it.
5. Now add, 2 chopped onions to the water. we will cook onions with dal, it will give a good taste to the mixed dal fry recipe.
6. Take out the water from the dal. I have soaked dal till the water started boiling in the cooker. If you soak dal for 30min- 1 hour then it will cook faster. So if you have planned to make mixed daal then preferably soak the dahl after washing them well.
7. Further, add mix dal and 1/2 tsp turmeric powder to the boiling water in the cooker. Now put the lid on the pressure cooker and let the daal cook on medium to high flame for 10-12 minutes and then on slow to medium flame for 5-7 minutes up to a few whistles until cooked.
8. Open the lid of the cooker when the pressure releases and check the dal if cooked. If not cooked then cook again.
Making garlic-flavored spiced tomato mixture
9. Take 2 tomatoes and chop them after washing.
10. Make a puree out of the tomatoes. alternatively, you can use finely chopped tomatoes also.
11. Heat 2 tbsp oil or ghee in a deep bottom pan and add 6 finely chopped garlic cloves.
12. Once garlic changes the color, add prepared tomato puree to it.
13. Add 1/4 tsp turmeric powder, 1/2 tsp cumin powder, 1/2 tsp garam masala powder, 1 tsp Kashmiri red chili powder, and 1/2 tsp salt to the puree, give a stir and continue cooking.
14. In some time the oil will ooze out of the tomato mixture.
Making mix dal
15. Further, add cooked mixed daal to the tomato mixture, stir and simmer for a few minutes more.
16. Take lemon juice.
17. Mix dal fry is cooked, switch off the gas, and add 1tbsp lemon juice to the mix dal.
Garnish mixed dal with some fresh coriander leaves. Serve simple and delicious mix dal fry with roti, steamed rice, jeera rice, naan, or paratha, and enjoy the comforting and tasty Indian meal.
