Noodles Balls Recipe | Evening Snacks Recipe Noodles Balls– Noodles balls come under the starter or snacks category in which boiled Hakka noodles are combined with thick white sauce, flavored with Indian spices, shaped into balls, and deep-fried. These are so appetizing that even though the process is a bit lengthy yet you end up making it frequently because of its taste that will leave you craving for more and more. If you give cutlet shape to the noodles instead of balls then you may call it Noodles cutlet or noodles patties or noodles Tikki also. Kids, as well as adults, will surely love to have these noodles balls as their evening snacks.
In this Indian Evening Snacks Recipe
I have used Hakka noodles as the main ingredient but the spices used are Indian and to give the required binding and texture to the ball, I have used thick white sauce which is from Italian cuisine. So actually, this is a fusion recipe that is very high on taste.
If you plan to make this starter or snack then you can prepare it a few hours in advance. When you want to eat, just take out the balls from freeze and deep fry.
If you follow the process right then some lovely compliments from your near and dear ones are surely on the way!
How to make Noodles Balls

For Boiling Noodles
1.Boil the water with 1 tsp salt and 2 tsp oil. Add 1 packet of hakka noodles to it.
2.Cook on high flame till noodles get boiled.
3. After boiling take out the noodles from hot water, put them in a strainer, and wash them under running water so that the cooking process stops.
For White sauce
4.Heat butter in a pan. keep the flame low otherwise butter might burn.
5.Add all-purpose flour to it.
6. Keep stirring it on low flame. Let it be aromatic but the color should not change.
7.When aromatic, gradually add milk to it while stirring continuously.
8. Once you add all the milk, put the flame on high and stir continuously. It will start thickening. You will observe that it is leaving the sides now. You need to continue stirring till you switch off the gas.
9. Switch off the gas. Add 1 cube of grated processed cheese to it.
10. Add ¼ tsp salt and ¼ tsp black pepper powder to it.
For Noodles Balls
11. Take the noodles, in a bowl. Add finely chopped corriander, red chili powder, garam masala, salt, dry mango powder, chaat masala, black pepper powder to it.
12. While white sauce is still hot add it to noodles and mix well.so that all the spices, noodles, and white sauce are mixed well.The Thick white sauce will give binding to the noodles so that you will be able to make the balls easily and the sauce will give the required texture, binding, and taste to the balls.
13. In a bowl, take all purpose flour and cornflour. Add salt and black pepper powder to it.
Gradually add water while stirring it with whisk to make a smooth batter.There should not be any lump in it as we want smooth batter.
For Bread Crumbs
14. Toast the breads in a oven or griddle.
15. Grind the pieces of bread in a mixer to make bread crumbs.Your dry bread crumbs are ready. Instead of making bread crumbs at home, you can use ready bread crumbs also which are easily available in the market.
16. Start making small balls out of noodles mixture , you can grease your palm with little oil and make balls.
17. Dip the ball in batter, take out, put on bread crumbs, and coat it well with the bread crumbs. Ideally use one hand for dipping and another hand for coating bread crumbs.
18. Repeat the process twice. After coating with crumbs again put in batter and then crumbs, this way the balls will be coated well and after frying the layer will be crispy.
19. Now heat the oil in a Kadai and once oil is hot enough, put the balls one by one and fry. You can fry 6-7 balls at a time as you can see in the pic.
Flame should be medium to high as everything is cooked inside, we just need to make outer layer crispy.
20. Take out the noodles balls and serve hot. Tasty Indian snack Noodles balls is ready to be relished.

- Non stick Kadai for frying noodles balls

Ingredients
For Boiling Noodles
- 1 Packet Hakka Noodles
- 1 tsp Salt
- 2 tsp Oil
- 7 Cups Water
For White Sauce
- 2 tbsp butter
- 2.5 tbsp All Purpose Flour (Maida)
- 1 Cup Milk
- 1/4 tsp salt
- 1/4 tsp Black pepper powder
- 1 cube processed cheese
For Bread Crumbs
- 5 pieces Breads(I have taken white bread,you can use whole wheat or multigrain also)
For batter
- 1/8 cup All Purpose flour(maida)
- 1/8 cup Cornflour
- 1/2 cup water
For Noodles balls
- 1 packet boiled Noodles(that we got by process of boiling noodles)
- Already made White sauce
- 1/4 cup Finely chopped corriander leaves
- 2 tsp Kashmiri Red chilli powder(which is not very spicy)
- 1/2 tsp Garam masala
- 1.5 tsp Salt
- 1.5 tsp Chaat masala(I have used everest chaat masala)
- 1/2 tsp Dry Mango Powder(Amchoor Powder)
- 1/4 tsp Black pepper powder
- Oil for frying
Instructions
For Boiling Noodles

- It took me 10-12 minutes to boil the noodles.
