paneer bhurji gravy recipe | paneer bhurji curry – paneer bhurji gravy means crumbled Indian Cottage cheese in gravy or curry. It is a flavorful preparation of crumbled paneer (Indian Cottage Cheese) in onion-tomato gravy with aromatic spices and the richness of cashews.
paneer bhurji gravy is a good vegetarian substitute for egg bhurji but I must say that paneer bhurji with gravy is so delicious that even egg-lovers would not give it a miss!
Serve Paneer Bhurji curry with Pav, Lachcha paratha, Tandoori Roti, chapati or Naan along with some sliced onions, and your scrumptious meal is ready.

Tips and suggestions for paneer bhurji curry
- I have used the combination of grated and crumbled paneer for better texture and taste. However, you can use either grated or crumbled paneer only.
- Cashews blended with tomatoes add richness and binding to the gravy whereas cashew pieces at the final stage enhance the look apart from giving a nutty bite to the paneer bhurji curry.
- Capsicum addition is optional. I like to add half chopped capsicum to the paneer bhurji gravy. Do not overcook the capsicum as the capsicum crunch goes well with the dish. If you wish you can substitute the capsicum with boiled peas also.
- You can use homemade or store-bought paneer but it is recommended to use good quality, soft paneer for the best results.
- If you want to make the gravy less rich then decrease the number of cashews in the gravy As cashews thicken the gravy so if you are reducing the number of cashews then you need to reduce the amount of water as well that you add to the paneer bhurji curry.
- Do not overcook the paneer as it might turn rubbery.
How to make paneer bhurji gravy with step by step photo
- Firstly, Heat 2.5 tbsp ghee in a non-stick pan. Crackle 1 tsp Cumin seeds(Jeera) in it.
2. Finely chop 2 onions, 8 cloves of garlic, and inch ginger. Add them to ghee.
3. Saute the onion, ginger, garlic mixture until golden.
4. In the meanwhile crush 4 tomatoes with 22 cashews in a blender to make a puree. Keep aside 5 cashews for garnishing.
5. Further, add the prepared puree to the golden onions, mix well.
6. Add 1 tsp 2 tsp Kashmiri red chili powder,1.5 tsp salt or salt to taste, 1.5 tsp garam masala.1/4 tsp turmeric powder.1 tsp cumin powder, 1 tsp coriander powder, 1tsp kauri methi to it. Cook till the oil separates from the sides.
7. Now add 1/2 chopped capsicum to it. Cook for 30-40 seconds.
8. Additionally, add 3 cups of water to it. The gravy has cashews to it so it will thicken.
9. Once it boils add 400 gms of Paneer to it, half the paneer quantity (200 gm) in grated form and half the paneer quantity (200 gm) in the crumbled form.
10. Give it a stir and cook for some time till you get the desired consistency, Do not overcook the paneer, switch off the gas.
11. Garnish with finely chopped coriander leaves and cashew pieces. Some grated paneer on the top will make the dish more appetizing,
12. Your delectable paneer bhurji gravy is ready to serve.
