Tips and suggestions for paneer bhurji curry

  • I have used the combination of grated and crumbled paneer for better texture and taste. However, you can use either grated or crumbled paneer only.
  • Cashews blended with tomatoes add richness and binding to the gravy whereas cashew pieces at the final stage enhance the look apart from giving a nutty bite to the paneer bhurji curry.
  • Capsicum addition is optional. I like to add half chopped capsicum to the paneer bhurji gravy. Do not overcook the capsicum as the capsicum crunch goes well with the dish. If you wish you can substitute the capsicum with boiled peas also.
  • You can use homemade or store-bought paneer but it is recommended to use good quality, soft paneer for the best results.
  • If you want to make the gravy less rich then decrease the number of cashews in the gravy As cashews thicken the gravy so if you are reducing the number of cashews then you need to reduce the amount of water as well that you add to the paneer bhurji curry.
  • Do not overcook the paneer as it might turn rubbery.
