Paneer Khurchan | Easy Paneer Khurchan Recipe– Paneer Khurchan is a semi-gravy dish of sauteed paneer, capsicum, tomato, and onion with a thick onion-tomato gravy base. Paneer is Indian cottage cheese and khurchan means scraping.
Indian cottage cheese or Paneer is sauteed on tawa or thick bottom vessel, while cooking, it sticks at the bottom of the vessel and you scrap and continue the cooking process hence the name khurchan.

Tips and variations for this easy paneer Recipe
- Store-bought tomato puree speed up the cooking process. However, you can use homemade tomato puree or crushed tomato also.
- This dish is made on an iron tawa or heavy bottom steel, iron, or aluminum vessel as the paneer will stick at the bottom of these vessels and the scrapping can be done, however, if you wish to make this dish is minium oil or ghee then it is advisable to use a non-stick pan.
- You can use tofu instead of paneer for a healthier version of paneer khurchan
- I have used yellow capsicum with green capsicum as the colorful dish looks more appealing and enhances the nutrition.
- Do not overcook the veggies as the crunchy vegetables taste good in paneer khurchan.
- Avoid overcooking the paneer as it will make the paneer rubbery and handle the paneer with care as the soft paneer can break during the cooking process.
- Instead of crushed ginger garlic, you can use finely chopped ginger garlic or ginger garlic paste as well.
How to make paneer khurchan

Preparation
- Firstly, cut 400 gm paneer in thick strips. I do not recommend cutting thin strips as the soft paneer can break during cooking.
2. Take 1 tomato, 1/2 green capsicum, and 1/2 yellow capsicum and slice them.
3. Additionally, take 4 garlic cloves and a 1.5-inch ginger piece.
4. Crush them in mortar and pastel.
Making onion-tomato base
5. Further, heat 2 tbsp ghee or clarified butter in a pan or Kadai. Add 2 finely chopped onions to it.
6. Once onions are translucent, add crushed ginger garlic to it.
7.Stir and keep sauteeing.
8.When the mixture turns light golden, pour 250ml tomato puree into it. Alternatively, you can use crushed tomato also.
9. Mix and add the following spice powders to it.
- 1 tsp Kashmiri red chili powder( Kashmiri red chili powder is low heat if using high heat red chili powder then reduce the quantity of the spice powder)
- 1/2 tsp garam masala powder
- 1 tsp cumin powder
- 1/8 tsp turmeric powder
- 1 tsp coriander powder
- salt to taste or 1 tsp salt
Cook for 2 minutes. Onion tomato mixture is ready, switch off the gas.
Sauteeing Paneer, capsicum, tomato, onion
10. Take a heavy bottom pan or griddle, heat 1 tbsp ghee and saute 2 sliced onions in it.
11. Just saute for 1 minute and add green and yellow capsicum strips.
12. Keep sauteing for 30-40 seconds.
13. Now add paneer pieces to it.
14. Add the tomato strips and the following spice powder to the paneer mixture.
- 1/ 4tsp Kashmiri red chili powder
- 1/2 tsp coriander powder
- 1/8 tsp turmeric powder
- 1/2 tsp cumin powder
- salt to taste or 1/2 tsp salt
- 1/2 garam masala powder
15. Mix lightly, paneer will start sticking at the bottom, do the mixing lightly as the paneer is fresh and soft.
Making Paneer Khurchan
Further, add the prepared tomato mixture to it.
16. Give it a stir and cook for 1-2 minutes and switch off the gas. The onion-tomato mixture and paneer are already cooked. We just want all the flavors to come together. We will not use any water as this dish has semi-gravy consistency.
17. Garnish with finely chopped coriander leaves.
Easy and tasty paneer khurchan is ready to be served.

- 1/4 tsp kashmiri red chili powder
- 1/2 tsp coriander powder
- 1/8 tsp turmeric powder
- 1/2 tsp cumin powder
- 1/2 tsp salt or salt to taste
For paneer khurchan

- sauted paneer, capsicum,tomato,onion mixture
