Papad ki Sabzi Recipe with step-by-step instructions and pics-Papad ki sabzi is a curry made from papad in tomato or curd base or in the combination of tomatoes and curd both.

This curry is a popular delicacy from Rajasthani cuisine.

Whenever you do not have any veggies at home or unexpected guests arrive at home then this papad sabji comes to your rescue as we can prepare this papad curry in 15 minutes only.  Enjoy this tasty Rajasthani staple with roti, paratha, jowar or bajra roti.

Papad is also called papadam or poppadum, is usually served with the meal after roasting or frying. But yes, a delicious and quick curry can be made out of this meal accompaniment. 

There is a variety of papad available in the market, papad made from moong dal, chana dal, urad dal, rice flour or millets. In this papad ki sabzi recipe, I have used bikaneri papad made from moong dal and urad dal. However, you can take any other variety of papad also.

Tips and variations for papad ki sabji | papad curry

  • I personally like the tomato base in papad ki sabji so my recipe makes good use of tomatoes. However, if you like curd then instead of tomatoes you can use curd also to make the base of papad curry.
  • Papad tends to absorb the curry so you can make the papad curry in advance but roast and add the papad in the curry at the time of serving as it takes a few minutes only to make the sabzi once the gravy is ready.
  • Instead of roasting the papad on tawa or griddle, you can roast the papad directly on flame also or fried papad will also serve the purpose. But, roasting on a griddle ensures that papad does not burn and roasting does not require any oil also, unlike frying. So roasting papad on tawa is a better alternative in my opinion.
  • Rajasthanis like to prepare food in ghee. I make this Rajasthan delicacy in ghee and the result is superb. If you do not prefer ghee, oil can also be used in papad ki sabji.
  • Papad is salty so the papad curry or papad ki sabji requires less salt.

How to make papad ki sabzi

  1. Firstly, roast papad on hot Tawa on both sides.

2. After roasting papad, keep them aside.

3. Break the papad into big pieces and start preparing for the papad curry.

4.Further, take 3 big tomatoes, 1 tsp chopped ginger, and 2 garlic cloves.

5. Blend tomatoes, ginger, and garlic into a blender to make a puree.

6. Additionally, take 1/4 tsp turmeric powder, 1 tsp kashmiri red chili powder, 1 tsp cumin powder, 1 tsp coriander powder, 1/2 tsp garam masala powder in a bowl.

7. Add 1 tbsp water to the spices and mix well to make a paste out of it.

8. Heat 1 tbsp ghee in a pan or deep bottom vessel and crackle 1 tsp cumin seeds in it.

9. Now, add prepared spices paste to the ghee now.

10. Stir quickly, next add prepared tomato puree to paste and, cook it. you will see the oil separating the sides in some time.

11. Add 1.5 cup water to the puree, giving it a stir.

12. When water comes to a boil, add 1/2 tsp salt and papad pieces to it

13. Let the papad cook in the curry.

14. Papad pieces will be softened within a few minutes, switch off the gas.

15. Garnish with the finely chopped coriander leaves.

  • 3 papad or papadam or poppadum
  • 3 tomatoes
