Seyal Phulka is a Sindhi delicacy made from leftover rotis in spiced ginger, garlic, and tomato gravy,
Usually in Sindhi households, seyal phulka or seyal maani is eaten in breakfast if last night dinner chapatis are left.
Sindhis love to relish seyal phulka with papad. Curd or tea accompaniment also goes well with this leftover chapati snack.
Tasty seyal phulka dish is a quick preparation and surely a good way to reuse the leftover rotis or chapatis.
However, if you do not have any leftover chapatis then you can prepare fresh rotis or chapatis to make this sindhi breakfast item.

Tips and variations for sindhi breakfast seyal maani
1. While making seyal phulka, few roti pieces will be mashed and merged with the gravy and few chapati pieces will hold the texture, this will enhance the overall taste of the dish.
2. Seyal Phulka tastes the best when hot. it requires only 15 minutes to prepare the dish so it is recommended to make the dish 15-20 minutes before the serving.
3. If you do not have leftover chapatis then make seyal maani with fresh chapatis.
4.Tomatoes give a bit of sourness to this . However, if you feel the need to make it sourer, add some lemon juice when the dish is ready.
How to make Sindhi Seyal Phulka | recipe from leftover chapati
- Firstly, take 3 leftover or fresh rotis (chapatis).
2. Cut them with the help of a pizza cutter or scissors. You can tear rotis with your hands also.
3. Keep aside the cut roti pieces.
4. Further, take 3 garlic cloves and a 1-inch ginger piece.
5. Additionally, take 1 big chopped tomato.
6. Heat 1 tbsp oil in a pan. Saute finely chopped garlic and ginger in the oil.
7. Further, add crushed tomato or tomato puree to the pan.
8. Addtionally, add 1/2 tsp red chili powder. 1//8th tsp turmeric powder, 1/2 tsp cumin powder, 1/2 tsp garam masala, 1 tsp salt.
9. Spices will be mixed well and oil will leave the sides in some time.
10. Add 1.5 cup water to the pan, give it a quick stir, and let the gravy come to a boil.
11. Next, add chapati pieces to the prepared gravy.
12. Stir gently and let it cook for some time till the major portion of the water is absorbed and roti pieces get all the flavors of the ginger, garlic, tomato, and spices.
13. We do not have to reduce the entire gravy as this dish has semi gravy consistency so when some gravy is still there in the pan, switch off the gas.
14. Garnish with the chopped coriander leaves.
Delicious seyal phulka is ready.
