Koki is called Sindhi Paratha or Koki paratha also. Quick and tasty Koki is surely capable of winning the hearts of non-Sindhis too. Koki is very filling thus an apt choice for breakfast. There are different variations in making this recipe. I combine whole wheat flour with onion, coriander, oil, spices. You can add finely chopped green chilies and cumin seeds also. It is optional.

Ingredients for Koki

  • 1.5 cup Whole Wheat Flour
  • 1 Cup Onion Chopped
  • 2 tbsp Corriander leaves Chopped
  • 1.5 tsp Salt
  • 2 tsp Kashmiri red chili Powder
  • 1 tsp Everest Garam Masala
  • 3 tbsp Oil
  • 1 Green chili finely chopped optional
  • 1.5 tsp oil for cooking 1 koki

How to make sindhi koki

1.Take Chopped Onion and Chopped Corriander leaves in a bowl. Add whole wheat flour, oil and all the spices to it. Knead with palms till you mix well all the ingredients, the flour, spices, and oil

2. Now add little by little water and knead into stiff dough so I used little less than 1/4 cup water to knead the dough.

3. Make 5 equal balls out of it. Dust little flour on the rolling surface and roll the ball into a circle like roti but Koki is thicker than roti as you can see in the pic. Roll out carefully and if it breaks, stick back with fingers.

It is okay if edges are uneven as we have added a good amount of oil in flour and koki has a thick texture and not very smooth edges.

Heat the tawa(griddle) Sprinkle little oil on it and put koki on it and cook on low to medium heat as koki is not soft like roti, it is crunchy.

4. Turn the side and cook again and apply oil or ghee to it.it took 4-5 minutes for me to cook 1 koki. I have applied 3/4 tsp oil to each side of the koki.

You need to cook it on slow to medium heat as we cook Koki that way. It is flaky and little crisp roti from the outside which is softer from the inside. Once koki is cooked, transfer it to a plate and serve. Your delicious Koki is ready.
