Sindhi Sai Bhaji Recipe–Sindhi Sai bhaji is a delicious and healthy preparation of Bengal gram(Chana Dal) and spinach, The name sai bhaji means green vegetable. It is also called Sindhi dal palak, dal means lentil and palak means spinach. This Sindhi cuisine dish is very healthy as it is a combination of lentils and greens. Lentils are a good source of protein and spinach has vitamins, minerals, and fiber. This nutritious Sindhi style dal palak goes well with any pulao, steamed rice, or jeera rice. Usually, Sindhis serve sai bhaji with bhuga chawal (onion pulao)
Tips and suggestions for sai bhaji Sindhi style
- Use Bengal gram in this recipe as this lentil gives a good texture and taste to the Sindhi sai bhaji.
- Burnt garlic tempering (Tadka) goes really well with Sindhi dal palak. Make sure you add it at the final stage.
- You can add other veggies of your choice also in combination with spinach. Soak the Bengal gram at least for an hour before making the dish otherwise, the cooking time will increase.
- Tomatoes and Kashmiri red chili powder add beautiful red color along with an enhanced taste to the green sai bhaji. If you want bright green color then add green chilies instead of red chili powder and reduce the number of tomatoes and include lemon juice to add some sourness to the dish.

Sindhi dal palak recipe with step by step pics
1.Firstly take 1 cup of Bengal Gram (Chana Dal ).
2.Rinse and soak it in water for at least 1 hour before making the Sindhi style sai bhaji.
3.Take 4 cups of spinach (Palak) and rinse it well.
4. Then chop the spinach finely. Grate 1-inch ginger piece and chop 1 onion also.
5.Take out the chana dal from the water. Crush 3 tomatoes to make a puree out of it.
6. Further, put together chopped spinach, onion, tomato puree, and soaked Bengal gram in a pressure cooker. Additionally, add 1.5 tsp Kashmiri red chili powder.1.25 tsp salt, 1/2 tsp turmeric powder.1 tsp garam masala, 1 tsp coriander powder,1 tsp cumin powder to it.
7. Pour 5.5 cups of water to the bhaji and give it a stir. Cover it with a lid and pressure cook for 15-20 minutes until done. Whistles may vary according to the pressure cooker, heat, etc.
8. Let the pressure release from the cooker. Press one lentil grain between your 2 fingertips to check if the chana dal is cooked properly.
9. Now mash sindhi dal palak with a whisk. Alternatively, you can use the hand blender to mash it.
10. you will see that though the sai bhaji is mashed, the chana dal still holds its texture to some extent.
11.Heat 3.5 tbsp oil in a pan for tempering. Add finely chopped garlic to it(10 cloves). Let it get browned properly.
12. Further, mix this burnt garlic tadka(tempering) to the sai bhaji,
13. Add 1/2 tsp dry mango powder to the Sindhi sai bhaji, give it a stir. Cook this Sindhi Dal palak again for 2-3 minutes till the tadka flavor is combined well in the sai bhaji.
Your Delectable Sindhi Sai bhaji is ready. Enjoy it with bhuga chawal, steamed rice, jeera rice or any other pulao.
