Firstly, take 1 cup palak, wash it thoroughly after plucking the stems.
Additionally, take 1 onion and 1 green chili deseeded.
Further, chop drained palak, onion, and green chili finely. I have chopped them together in a chopper.
Additionally, add 1/4 tsp turmeric powder, 3/4 tsp salt, 1/2 tsp garam masala, 1 tsp cumin powder, 1.5 tsp oil to the chopped palak mixture in a bowl.
Add 1 cup whole wheat flour to it.
Mix well, the chopped onion and spinach will leave some water, use that to knead the flour. Add 1/4 tsp red chili powder to it as I have used 1 deseeded green chili only so I am using some Kashmiri red chili powder also.
Add 1 tbsp curd to the mixture now. To start with, use only 1/2 tbsp curd, knead and if required use more curd and water.
Knead into the dough using curd and use the water as per the requirement. I have used 1 tbsp water for making the dough. Let the dough rest for 5-10minutes.
Further add 1.5 tsp oil to the dough and knead well to make it smooth.
Take some dough, make a ball out of it and start rolling it after dusting some flour on it.
Roll it in the form of a circle, slightly thicker than the chapati.
Drizzle some oil on hot tawa.
Place the rolled paratha over it and cook.
Flip it after 30-40 seconds when partially cooked.
Flip again when cooked on other side and apply some oil on it.
Continue the same process of applying ghee or oil on paratha after flipping the other side.
Palak paratha is ready, take out on a plate.
