Easy Indian Zucchini Fry Snack Recipe-Zucchini fry is an easy Indian snack recipe made from zucchini, Indian spices, and a mix of gram flour and rice flour.We can serve shallow fried zucchini with green chutney or tomato ketchup as a quick evening snack or tea-time snack.
Take 1 green zucchini. wash and pat dry with a cloth
Remove the edges of the zucchini and cut it into rounds. The slices should not be too thin or thick as the thin slices will not hold the texture after getting cooked whereas thick slices will not be cooked properly. Drizzle 1/2 tbsp lemon juice and 1/2 tsp salt on the zucchini roundels.
For coating zucchini
Take 2.5 tbsp gram flour (besan) and 2.5 tbsp rice flour in a bowl.
Add 1/2 tsp salt, 1/2 tsp kashmiri red chili powder, 1 tsp coriander powder, 1/4 tsp turmeric powder, 1/2 tsp cumin powder, and 1/2 tsp garam masala powder to the flour.
Mix the flour and the spices well with a spoon.
Coat zucchini roundels well with the spiced flour mixture.
For making zucchini fry snack
Heat 2 tbsp mustard oil in a non-stick pan and add zucchini to it in batches.
Shallow fry on a medium flame till crispy on one side, flip it and repeat the same process for the other side.
Let the other side be crispy as well.
