Firstly, take 2 tbsp chopped onion (1 onion small), 3 tbsp chopped carrot, 3 tbsp chopped cabbage.
Finely chop 2 tomatoes.
In a pan, heat 2 tbsp oil and crackle 1 tsp cumin seeds into it.
4. Further, add onion, carrot, and cabbage to the oil. They will not take much time to cook as we have chopped them into small pieces.
Saute them for 2-3 minutes. We want some crunch in veggies so will not overcook them.
Additionally, add chopped tomatoes to it.
Now, add 1 tsp salt,1/2 tsp garam masala powder, 1/2 tsp cumin powder, 1/8 tsp turmeric powder, 3/4 tsp Kashmiri red chili powder to the mixture.
Mix and cook until tomatoes turn mushy and oil is separated from the cooked masala.
Add 3 cups of water to the masala and bring it to a boil.
Take 3/4 cup old-fashioned rolled oats. I have used captain rolled oats. You can use any other brand also.
Add rolled oats to the boiling water. Then give it a stir.
Continue cooking oats on medium to high flame until oats are cooked with your desired consistency. Keep on stirring in between the process so that oats do not stick at the bottom.
Once you get the desired consistency, switch off the gas. Oats tend to absorb some water as you keep it for some time, It tastes the best when served hot.
Garnish tasty masala oats with some coriander leaves and onion rings (optional).
